Safety
Rhubarb (CAS NO.97676-32-9) has low toxicity by ingestion. The raw or canned leaves contain poisonous anthraquinone glycosides and soluble oxalates. The most common symptom from ingestion of the leaves is diarrhea. Oxalate poisoning from ingestion of large amounts of the leaves may have caused kidney damage. See also OXALATES.
